Red Velvet Cupcake Ice Cream Sandwich

I love cake. And I really, really love cupcakes. They are the portable, miniature form of something perfect. So what happens when you take a cupcake and add ice cream? A cupcake ice cream sandwich, of course! I baked up a batch of my favorite red velvet cupcakes, sliced the tops off, then added a scoop of my favorite vanilla gelato. A perfect afternoon snack.
