Growing up my mom would make fudge crinkle cookies all the time because they were so easy to make and we’re always a crowd favorite. I thought I would take her simple recipe which normally uses a box of devil’s food cake mix and swap it with my favorite type of cake—red velvet! The results were delicious. I think I’ve eaten 2/3 of them this week. Oops.
Red Velvet Cake Mix Cookies aka Crinkle Cookies
- One box of red velvet cake mix
- 2 eggs
- 1/2 cup of vegetable oil
- Sanding sugar, raw, sugar, or powdered sugar (all of these work so use whatever you have on hand. I used sanding sugar for mine)
Preheat oven to 350 degrees and mix all the ingredients except the sugar in a large bowl. Then roll into balls about 1″ in diameter. I like to use a small metal ice cream scoop so they are all the same size. Then roll in the sugar and place on a parchment or sil-pat lined cookie sheet and bake for 10-12 minutes. Let them cool for a couple minutes on the pan then move them to a cooling rack to cool completely.
If you happen to have an extra sweet tooth while you’re making these, you can always turn them into an ice cream sandwich!
