I have a confession of sorts to make (ok, maybe two actually). 1. I got to Target waaaaay too often and 2. I ate that entire chocolate strawberry shortcake as soon as I photographed it…right before I ate dinner.

Going back to my first confession. Do you find yourself in Target all the time too? When I have time to kill, or when I want to procrastinate, I go down nearly each and every aisle. While checking out the magazines I was enticed by the cover of the July issue of  All You magazine. All You is now available at Target and is packed with coupons, money saving recipes and even home decor idea. And since I’m a big fan of all those things, I had to get a copy!

After making a cup of coffee, I spent some time reading the mag and decided to try out one of their recipes. My sweet tooth led me to the chocolate strawberry shortcake recipe. It was a perfect choice because the recipe uses common ingredients that I already had on hand. They were really simple to make and would be a perfect dessert to serve tomorrow at your 4th of July get together. No one has to know that it cost you nearly nothing, they will all be impressed by the taste of the homemade whipped cream!

Chocolate Strawberry Shortcake

Ingredients:
1/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup plus 2 tbsp. sugar, plus extra for sprinkling
4 tbsp. cold unsalted butter, cut into small pieces
5 tbsp. whole milk
4 cups (about 16 oz.) strawberries, stemmed and sliced
2/3 cup heavy cream

Make 4  servings

1. – 2. Heat oven to 425 degrees. Sift (or don’t as I did) the cocoa powder, flour, baking powder, baking soda, and salt in a large bowl. Use a whisk combine.

3. Add the small pieces of butter and use your hands to incorporate it. The mixture should look like coarse meal.

4. Add the milk and mix until a dough forms.

5. Divide into 4 equal portions and place on a sil-pat or parchment lined baking sheet.

6. Meanwhile, place the cut strawberries in a bowl and mix them with 1/4 cup of sugar.

7. – 8. Bake for about 12-14 minutes, or until a toothpick inserted into one of the biscuits comes out clean. Remove from the oven and place the biscuits on a cooling rack to cool completely.

9. After about 30 min. the strawberries should look syrupy, like the photo above. That means they are ready to be eaten!

10. Use a stand mixer (or a large bowl and a hand mixer) to whip the heavy cream and 2 tbsp. sugar until stiff peaks form. I always use a metal bowl and put it in the freezer for at least 15 minutes before I make whipped cream. This helps the cream stay cold and whipped. Now you’re ready to serve! Use a serrated knife to cut the biscuits in half then place a quarter of the strawberries on the bottom half of the biscuits. Top with a dollop of whipped cream and the top park of the biscuit and enjoy!

Now that All You is available at Target, I’m going to make finding it part of my Target routine… which probably means I will be checking it out tomorrow!
