Hi there, it’s Jeran of Oleander + Palm. I’m so excited to have my friend Sarah so close to me now. Yay, welcome to Cali Sarah Hearts! I live just 2 hours away from LA, so I’ll be stopping by the Khandjian home often. Actually I already have visited, and their new place is adorable. So, Oleander + Palm is really just bits and pieces of our simple California life. I share DIYs, thrifty design and recipes I make for my family. I believe simple is beautiful. Simple California Living doesn’t cost a lot, isn’t complicated, and is very relaxed and comfortable.
California living can also be very HOT. Right now we are still in 100F temperatures and I don’t want to cook or turn on the oven. We are grilling often and eating salads and anything cool.
This watermelon feta salad is as refreshing as they come. With very little effort, you can have this chilled treat ready to serve. Eat by itself for lunch, and serve it with your favorite grilled meat for dinner.
Watermelon Feta Salad
watermelon diced (about 4-5 cups)
feta diced (1 8oz. package)
English cucumber sliced thin
1 tbsp. fresh mint finely chopped
1 cup white balsamic vinegar
salt and pepper to taste
Step 1: Start by reducing the balsamic vinegar. In a small pot, bring the vinegar to a boil. Boil for about 12 mins or until the vinegar reduces to about 1/4 cup. It will be thick and syrup-like. Chill in the fridge until you are ready to serve the salad.
Step 2: In a large bowl, combine the watermelon, feta, cucumber and fresh mint. Sprinkle with salt and pepper and drizzle with the balsamic reduction. Toss the salad and serve.
