Many of you that completed my reader survey last month wanted to see more lunch recipes so I’m excited to share one of my go-to lunch recipe with you today! It’s a simple chickpea, tomato and feta salad that can be thrown together in just a couple minutes and can be altered depending on your taste and what’s in your fridge.
Chickpea, Tomato and Feta Salad
1 serving
Ingredients:
– 1 tablespoon olive oil
– 1 tablespoon white balsamic vinegar
– 1 teaspoon dried oregano
– coarse salt and pepper, to taste
– 1 cup heirloom or grape tomatoes, halved
– 1/2 cup of canned chickpeas, drained and rinsed
– 1 ounce feta cheese, crumbled
Whisk together the olive oil, vinegar and oregano in a small bowl. Add the chickpeas, tomatoes, and feta and stir. Season with salt and pepper and enjoy!
Notes:
This salad keeps really well and can be made the night before. If you don’t have white balsamic vinegar, it’s also great with red wine vinegar.
For a caprese version, substitute the feta for fresh mozzarella pearls, the dried oregano for basil and the white balsamic for a high quality dark balsamic vinegar or a balsamic glaze. So delish!
