One of my favorite things about summer (besides wearing cotton dresses nearly everyday, and the long sun-filled days) is the wonderful produce that’s in season. I love cooking with local fruits and veggies when they’re at the seasons peak because they are the sweetest—and cheapest! Kevin picked up some Georgia peaches the other day and I decided to make a little summer snack with them. If you’re planning on having friends over for a bbq, make these. Seriously, this is the easiest recipe in the world and you friends are sure to be impressed (I can almost guarantee it)!
1. Slice a baguette into thin pieces and toast on a grill or oven (drizzle them with a tiny bit of olive). 2. While warm, spread goat cheese on the crostini. 3. Top with a slice of prosciutto, a ripe peach slice (peel removed) and drizzle with yummy local honey.
What’s your favorite recipe using summer’s peak produce?
