Rainbow Charcuterie Board

With St. Patrick’s Day just around the corner, I wanted to celebrate in style. For me, that meant finding a way to incorporate a rainbow into a party appetizer for hosting a St. Patty’s party. Since charcuterie boards are easy for everyone to enjoy, I put together a rainbow cheese board with a variety of fruits, vegetables, cheeses, meats, breads and other toppings so that it looked like a rainbow.



  • pomegranate seeds
  • red pepper slices
  • grape tomatoes
  • raspberries


  • cheddar cheeses
  • orange slices (fresh or dried)
  • carrots
  • orange bell pepper slices


  • yellow pepper slices
  • mango slices
  • pineapple


  • green grapes
  • pear slices
  • Granny Smith apple slices
  • green bell pepper slices
  • olives


  • blueberries


  • plum slices
  • grapes
  • blackberries

    I arranged the rainbow down the middle and filled in the sides with a variety of cheeses, meats, breads, jellies or nuts. I like to think about the different combinations guests can make with the ingredients on the plate and make sure everything has a good pairing. My personal favorite is a slice of French bread topped with goat cheese, peach jam and a plum slice. No matter what, it’s just so pretty to look at!
