Yep, you read the title correct. Red. Velvet. Pancakes. I know… it really is a good as it sounds. I mean, who wouldn’t love cake in breakfast form. This recipe is semi homemade because if you like me and baking and cooking a million other things for the holidays you need to use your resources (and by resources I mean red velvet cake mix)!

The lovely red color alone makes this the perfect Christmas breakfast but the cream cream drizzle on top makes it an extra special treat. Whip some up for your family and friends this Christmas and I promise they will love it you.

Red Velvet Pancakes with Cream Cheese Drizzle
Servings: About 20 1/4 c. full pancakes

Ingredients
For the pancakes:
• 1 1/4 cups all purpose flour
• 2 cups red velvet cake mix
• 1 Tablespoon sugar
• 3/4 teaspoon baking powder
• pinch of salt
• 2 large eggs
• 1 teaspoon vanilla extract
• 2 cups milk (I used non-fat)

For the cream cheese drizzle:
• 4 oz. cream cheese, softened
• 1/4 c. (1/2 stick) unsalted butter, softened
• 2/3 c. powdered sugar (you can add more if you like)
• 3 tbs. milk (add more if you want the drizzle to be more drizzly)

Whisk all the pancakes ingredients in a large bowl until combined. Then pour 1/4 c. of batter onto a pre-heat, buttered or oil skillet. Cook until bubbles began to form. Then flip and cook for another minute or so. Repeat until you use up all the batter!

Meanwhile, use a stand mixer to mix the butter and cream cheese. Add the powdered sugar and blend until combined. Add the milk, one tbs. at a time, until completely combined. Add more to make the drizzle thinner. Pour the cream cheese goodness into a zip top plastic bag. Snip the corner of the bag with scissor and pipe the cream cheese drizzle over the warm pancakes. Enjoy!

  1. Mmmmm…..! I made these for Valentine’s Day breakfast. Used devil’s food cake mix, as I didn’t have red velvet. They were delicious!!
