One of my favorite outdoor traditions has to be roasting marshmallows over a campfire and making s’mores. There’s something about gooey warm marshmallows that goes oh so perfectly with chocolate and graham crackers. These s’mores cake mix cookies have the same flavor as the popular summertime treat but with way less work (and no campfire necessary). A devil’s food cake mix is the base for these delicious s’more cookies and they are so quick to make that there are sure to become one of your new go to baking recipes.

I’ll admit I haven’t always been a huge fan of marshmallows. But when they are paired with chocolate and graham crackers I’m aways down. If you love all things chocolate, you could also stir in a cup of dark chocolate chips when you add the marshmallows for a little bit of melty chocolate goodness.
You can find graham cracker crumbs in the cookie aisle of your grocery store, right next to regular graham crackers. But if you already have graham crackers in your pantry just pulse them a few times in your food processor to make your own cookie crumbs. You can also place the cookie sheets in a zip top bag and use a meat mallet to break them into crumbs.
S’mores Cake Mix Cookies
ingredients
1 devil’s food cake mix
1/2 cup vegetable oil
2 eggs
1 cup mini marshmallows
3/4 cup graham cracker crumbs
supplies
stand mixer (or you can mix by hand)
baking sheet
silicone baking mat
mini cookie dough scoop
directions
- Preheat the oven to 350°. In the bowl of a stand mixer (or a large mixing bowl if mixing by hand) add the cake mix, vegetable oil, and eggs. Stir until combined and a sticky dough forms.
- Add the mini marshmallows and stir until they are incorporated. Use the cookie dough scoop to scoop out small, round portions of dough. Roll in the graham cracker crumbs and place on the baking sheet.
- Bake for 12-15 minutes or until they are set. Allow to cool for 5 minutes before devouring!
