Though it’s felt a lot like summer around here (I mean, hello 95+ degree temperatures!), Memorial Day is what most people think of the official start of summer. And nothing is better than a long weekend and a backyard bqq with friends to kick off summer, right?
And because every good hostess enjoys serving a delicious punch, I’ve created the essential summer drink. A watermelon mint agua fresca punch that really tastes like summer in a glass! It’s easy to make and combines fresh ingredients with Smirnoff Watermelon. It’s the perfect punch to serve at backyard parties and Memorial Day barbecues. Punch is my go-to cocktail of choice when serving a crowd because it’s so easy to make and the large batch means I don’t have to worry about making more half way through the evening.
Spiked Watermelon Mint Agua Fresca Punch
Makes 8 servings
Ingredients: 4 cups cubed seedless watermelon + more for ice cubes / 1 cup fresh mint leaves / 1 lime, thinly sliced / 1/2 cup simple syrup / 1.5 cups Smirnoff Watermelon / 1 cup club soda
Step 1: Puree 4 cups cubed seedless watermelon in a blender until smooth. Strain mixture over a fine mesh sieve and into a large bowl. It’s easiest to do this using the back of a wooden spoon to push the watermelon puree through the sieve. Discard solids and set aside.
Step 2: Place the mint leaves, lime slices, and simple syrup in the bottom of a large pitcher. Use a muddler or wooden spoon to crush the leaves and fruit.
Step 3: Top the muddled mixture with 2 cups of the strained, pureed watermelon. Add the vodka and club soda and gently stir to combine. Refrigerate the punch until you’re ready to serve.
Easy Watermelon Punch Hack
Why fill a glass with ice when you can fill it with frozen watermelon chunks instead?
My ice cube hack involves cutting fresh seedless watermelon chunks into cubes that are about 1 inch wide and placing them in an ice cube tray. Pop them in the freezer for at least an hour (or overnight). Take them out when you’re ready to serve the punch. Place about 5-6 cubes in each glass and serve with a small fork or cocktail pick so your guests can enjoy the watermelon after they finish the punch!
